Looking at this picture, a question may strike upon your mind, why people in Zhangjiajie like treating pork like this?

Actually , it is one of the most special cuisines-Tujia bacon in Xiangxi, Hunan Province, one thing that deserve your tramp over hill and dale.

In Zhangjiajie , there is a tradition of smoldering bacon for the next year. When approaching Spring Festival, people would kill a whole pig to celebrate it .and the pork, swine’s head and pettitoes are used to make the bacon.

Do not think we can easily acquire such delicacy, In fact, only several artistic steps can lead to this tasty! Firstly, salting the meat with a lot of spice for four or six days, secondly, smoldering the meat patiently, you’d better burn the dry orange peel for the sake of better result.

Then last but not least, cooking the Tujia bacon, unlike other meat, there are also some tips for you if you want to enjoy the favor, before you put it in the pot, you need to thoroughly clean ,stew , braise the bacon and then cut it into slices . after all these , you can eat it with vinegar-pepper or stir-fry it with other seasoning.
